Rickett’s Point Beaumaris, nestled in the serene Beaumaris area and adjacent to a Marine Sanctuary, offers a unique dining experience with spectacular views of Port Phillip Bay. Our cafe is renowned for its contemporary menu featuring gourmet platters, sandwiches, and pizzas made in a Brazilian BBQ and pizza oven. We cater to a wide range of events, offering venue hire for up to 100 guests with gourmet food and boutique wines.

We’re seeking a Senior Chef, permanent role, to lead our vibrant culinary team. This role is designed for a dedicated professional who is keen on long-term employment and capable of managing a small, dynamic team. The Senior Chef will play a crucial role in sustaining the cafe’s growth and elevating the dining experience at our scenic location.

Key Responsibilities:

  • Menu Planning and Cost Management: The Senior Chef will be responsible for creating innovative and appealing menus that reflect the cafe’s style while also managing food and labour costs efficiently. This involves forecasting budget needs, pricing dishes appropriately, and ensuring timely orders to keep the kitchen well-stocked without excessive expenditure.
  • Quality Control: Oversee all stages of food preparation, from ingredient selection to cooking and final presentation. The Senior Chef will ensure each dish is prepared to the highest standards, consistently meeting the cafe’s quality expectations.
  • Team Coordination: Lead and facilitate effective communication among kitchen staff and other departments like management and dietetics. The goal is to enhance teamwork and ensure that food preparation and delivery are seamless and efficient, aligning with the cafe’s service standards.
  • Culinary Training: Mentor kitchen staff by demonstrating advanced cooking techniques and guiding them through the proper culinary procedures. This includes conducting regular training sessions to help staff master new recipes and refine their cooking skills.
  • Food Preparation: Direct involvement in the cooking process is crucial. The Senior Chef will not only supervise but also actively participate in the preparation and cooking of dishes, ensuring excellence in every meal served.
  • Hygiene and Safety: Implement and monitor strict hygiene and safety protocols in the kitchen and dining areas to comply with health regulations and ensure a safe environment for both staff and patrons.
  • Staff Development: Take an active role in the recruitment and training of new kitchen staff. The Senior Chef will assess potential hires, provide initial training, and offer ongoing development to integrate them into the team effectively.
  • Food Preservation: Manage the proper storage and preservation of food, which includes organizing the inventory, monitoring shelf life, and employing techniques to minimize waste and maximize the use of ingredients.

Requirements:

  • Australian Citizens and Permanent Residents are encouraged to apply.
  • Minimum Certificate IV in Commercial Cookery or equivalent qualification.
  • Minimum 1 year of experience in a similar culinary leadership role.
  • Must have own transport and be available to work on weekends.
  • Exceptional leadership, customer service, and communication skills.
  • Ability to multitask in a fast-paced environment and a proactive approach to problem-solving.
