Job Description
As a member of the leadership team, you will assist the Executive Chef to oversee the kitchen operations and exhibit culinary talents by personally performing tasks while leading the Associates and managing all food related functions. The Executive Sous Chef will work continually to improve Guest and Associate satisfaction while maximising the financial performance of all areas of responsibility.
The Executive Sous Chef’s tasks will include but won’t be limited to:
Inspecting all food products, preparing and maintaining meal quality standards.
Maintaining compliance with health and hygiene regulations.
Adhering to cost and quality control procedures.
Assisting with hiring, training and scheduling all kitchen staff.
Be the face of the Restaurant floor, building relationships with loyal Guests and Associates.
Coaching and performance management of team members
Assisting with developing and implementing new menus.
Ensuring guidelines set for timely food service to guests are maintained.
Handle Guest concerns and complaints with genuine empathy
Uphold Sheraton standards and the hotel’s policies and procedures.
Strong communication with Front of House and Senior Management
Oversee cleaning and maintenance of equipment
Procurement of produce of the best quality and for the best price, with the use of Purchase Plus
Full understanding of safe Food & Hygiene requirements
Review Guest Comment Cards and identify areas for improvement
Requirements
The ideal candidate will possess a minimum 2 years’ experience as an Executive Sous Chef or 3 years as a Sous Chef in a similar 5 star environment. Must have a strong understanding of HACCP and completed Food Safety and Hygiene training and have full Australian working rights. Additionally, they would demonstrate strong leadership skills, high levels of attention to detail and accuracy and advanced communication skills. Flexibility to work a rotating roster including public holidays and weekends is also necessary.
